Mock Mashed Potatoes Supreme - Low Carb

Ingredients
1 cauliflower - med head3 oz cream cheese - softened2 tbsp sour cream1 egg1/4 cup parmesan cheese - grated1/8 tsp straight chicken base or bouillon1/8 tsp garlic powder1/8 tsp black pepper - freshly ground1/2 tsp chives fresh (garnish) optional3 tbsp butter (fat free margarine to lower fat)
Directions
- boil water
- clean cauliflower and cook until well done (about 7 min)
- drain well - do not let cool, pat dry with paper towel (otherwise runny and thin)
- use an immersion blender in a deep bowl and pulse hot cauliflower, cream cheese, sour cream, egg, parmesan, garlic, chicken base and pepper until almost smooth.
- Garnish with chive and serve with a pat of butter or margarine.
