* 1/2 slice, Cheddar or Colby Cheese, Low Fat * Red Ripe Tomatoes, .25 cup * Onions, raw, 1 tbsp chopped * 1 Small Corn Tortilla (4-5") * Beans, red kidney, 0.5 cup * Squeeze of lime * dash of hot sauce as desired
I prefer to use dried beans that I soak and then cook but it works fine with canned beans or non fat 'refried' beans. Basically you warm the beans and just mash them with the liquid they are cooked in. Season with salt, lime and hot sauce as desired. Pile the mashed beans on the tortilla, top with cheese and put in toaster oven until cheese is melted. Top with onions and tomatoes.
