Skillet-seared Cheesy Tomatoes

4 large, firm plum tomatoes, halved2 Tb Extra Virgin Olive Oil1 Tb dried parsley1 large clove garlic, minced1/2 tsp granulated sugar1/2 tsp salt3/4 mozzarella cheese
1. Heat EVOO in a large sautee pan or cast iron skillet on medium-high heat.
2. Slice tomatoes length wise. Arrange them in pan flat-side down and cook until just soft and undersides are darkened, about 15 minutes.
3. In a small bowl, combine minced garlic and parsley.
4. Very carefully turn over tomatoes. Sprinkle with salt and sugar. Cook another 10 minutes or until soft.
5. Evenly distribute parsley mixture onto each tomato surface. Cover with mozzarella cheese and cook another 2 minutes, or until cheese is melted. Serve warm.
Serving Size: makes 4 tomatoes (8 halves)
