Spicy Roasted Stuffed Pepper

Ingredients
Yellow bell peppers (2)-wholejalepeno peppers (2)-dicedhabenero peppers (1)-dicedcorn on the cobb(2 ears)-roasted and cut off cobbBrown rice(1 cup)black beans (1 can)avocado(0.25)-dicedtomatos(2)-dicedlettuce(3 leaves)-shreddedchalula hot saucemontreal steak seasoningred onion (0.25)-diced
Directions
Cook the rice and mix in black beans. Saute the onions and hot peppers along with the hot sauce and seasoning. Don't over cook the peppers, just enough to soften them. Add the rice and black bean mixture to the peppers. Cut the top off the yellow bell peppers and hollow out. Lightly coat the inside of the bell peppers with hot sauce and roast on the grill until inside is softened. Fill the bell peppers with the rice and bean mixture and put on plate. Top with avocado and roasted corn. Make a side salad from lettuce, tomato, remaining avocado and roasted corn.
