Gluten free, honey sweetened cheesecake

Almonds, 1 cup, ground Butter, salted, 2.5 tbsp Cream Cheese, 500 grams Honey, 0.5 cup Vanilla Extract, 2 tsp Egg, fresh, 2 large
Preheat the oven to 375F.
Soften the butter and combine it with the almonds. This will form the base of the cheesecake. Place the mixture in an 8 inch cakepan, spreading it along the the bottom.
In a separate bowl, combine the egg, softened cream cheese, honey and vanilla extract. Mix well with a hand mixer until it is smooth.
Pour the filling mixture onto the almond base.
Bake in the oven for approx. 30 minutes. The edges will be firm and the middle will be slightly softer.
Place it on a cooling rack.
Serve with cream and fresh fruit.
