Asparagus & Feta Couscous Salad

Ingredients
2 cups couscous1 bunch fresh asparagus, trimmed and cut into 2-inch pieces8 ounces grape tomatoes, halved5 ounces feta cheese, crumbled3 tablespoons balsamic vinegar or fresh lemon juice2 tablespoons extra-virgin olive oil2 cloves garlicBlack pepper, to taste
Directions
Cook couscous according to package instructions, but add a clove of garlic to the boiling water. Put aside and allow to cool slightly.
Meanwhile, place water and a clove of garlic in a pot and boil. Blanch asparagus in the garlic water. Drain and cool.
Toss the asparagus, tomatoes, and feta with couscous. Add the olive oil, balsamic vinegar, and black pepper and toss to incorporate.
