Tofu Ginger Stir Fry

Ingredients
Sauce:4 tbl Olde Cape Cod Soy Sesame Ginger Dressing2 tbs sweeet chili sauce1 tbs ginger oil2 tbs ginger teriyaki2 tbs soy1/4 c water1 pkg (14 oz) of firm tofu1.5 tsp each ginger, coriander, basil2 tsp minced garlic1 tbs ginger oil1 bag Eat Smart Vegetable Stir Fry6 lg scallions chopped in 2" pieces2 c fresh snow peas2 c fresh bean sprouts2 c fresh whole green beans1 lg bell pepper cut into chunks15 med mushrooms cut into halvessesame seeds to sprinkle across the top
Directions
1. Mix sauce together in a bowl and set to the side
2. Heat 1 tbs of ginger oil in a skillet (I use an electric skillet)
3. Cut tofu into bite-size blocks and add to hot grease. Cook until beginning to brown and add garlic, ginger, coriander and basil. Continue cooking until tofu is a bit crunchy and browned.
4. Add Stir Fry vegetables, bell pepper, scallions, snow peas, amd green beans. Stir occasionally to make sure veggies are cooking evenly. When still firm but beginning to tender, add bean sprouts and mushrooms and cover with sauce. Put lid on pan for about 5-8 minutes until all veggies are cooked but still firm.
5. Put stir fry on plate and sprinkle with sesame seeds.
