LENTIL PILAF (Armenian)

Ingredients
1. Rinse and pick over lentils.Add to water, bring to boil and add seasonings, cracked wheat and chopped pepper. Bring to boil again, lower flame and simmer 15 -20 minutes or until all liquid is absorbed. turn off flame.2. Heat olive oil in a skillet stir in minced onions saute until browned slightly. Pour the contents of the skillet over the Pilaf and stir gently. Serve hot or room temperature.Yield = 6 servings.
