Homemade Buns

8 cups Flour, white, 1 tsp Salt, 3 cups HOT Water, tap, 3/4 cup Granulated Sugar, 1/3 cup Canola Oil,1 ounce (2 TBSP) Yeast 2 medium Eggs, fresh, 1 tsp Vanilla2 TBSP of butter (optional)
Put hot water, sugar & oil in mixer. stir around. Mix 4 cups of flour and yeast together, then add to hot water mixture. Cover and let rise for about 20 mins.
When bubbly beat eggs and vanilla together and add to previous mixture along with salt and rest of flour. Knead for 8 - 10 mins.
Dump dough into a greased bowl and cover loosely. Let rise for 20 mins, punch down, cover and let rise again.
Punch down and roll dough into golfball sized balls and place on a greased cookie sheet. 24 - 28 per sheet. Brush with 1 TBSP of melted butter, cover lightly and let rise for about 1 hour or until doubled in size.
Bake for 18 - 20 mins in a preheated 305 F oven. Remove immediately and brush with another TBSP of butter if desired. Let cool and enjoy!
