1.5 cups shredded mozzarella cheese3 tablespoons goat cheese (crumbled)1/2 cup freshly grated parmesan cheese (divided)1/2 cup drained oil-packed sun-dried tomatoes (thinly sliced)1/2 cup thinly sliced fresh basil1/4 cup chopped green onions1 tablespoon chopped fresh oregano1 small zucchini (cut into thin rounds)2 large eggs1 cup half & half1/4 teaspoon salt1/4 teaspoon ground black pepper
Follow directions for pie crust or whatever you choose to use. Heat oven to 400 degrees; sprinkle mozzarella cheeese on bottom; top with 1/4 c. parmesan, all the goat cheese, tomatoes, basil, onions, oregano. Arrange zucchini circles in concentric circles, overlapping slightly until top is completely covered
Whisk eggs with half and half and salt/pepper. Carefully pour over pie; top with rest of parmesan.
Bake until golen brown, about 35 minutes. Serve warm or at room temperature.
