Loaded Baked Potato Soup (No Bacon)

Ingredients
4C Chicken Broth8 med Red Potatoes, cubed2 small carrots, chopped2 stalks celery, chopped1 med onion, diced4 tsp white vinegar2 tsp salt3C nonfat milk1/4C flour1.5 tsp dijon mustard3/4C grated Monterrey Jack Cheese3/4C grated cheddar cheesecracked black pepper to taste
Directions
Combine chicken broth, veggies, vinegar, and salt and bring to a boil. Simmer for 20 min. Wisk milk, flour, & dijon together. Stir milk mixture into soup. Add cheeses and stir. Cook another 10 min, stirring occassionally.
