Breakfast Casserole

Ingredients
1/2 Cup Kielbasa, finely chopped1 Cup Green Pepper, finely chopped1 Onion, finely chopped8 Eggs, lightly beaten4 Cups Frozen Hash brown potatoes1 Cup Cottage Cheese, 1% Milkfat1 Cup Swiss Cheese, shredded
Directions
1. In a large skillet, at low heat, cook chopped kielbasa, green pepper and onion until the onion is transparent.

2. In a separate dish, mix together the remaining ingredients. Then add kielbasa mixture.

3. Spray a 9" x 13" pan with Pam.

4. Pour egg mixture into pan.

5. Bake uncovered at 350 degrees for 40 minutes until eggs are set.

6. Let stand for ten minutes before serving.

Makes twelve servings.
