Fauxtatoes Atkins Style

Ingredients
1 large head cauliflower2 tbsp butter4 oz cream cheese2 tbsp sour creamsalt and pepper to taste
Directions
Trim the leaves from the cauliflower and carefully remove the stem keeping the head intact. In a microwave safe dish, add the cauliflower, stem side down, with a few tablesoons of water. Cover with plastic wrap and steam in microwave for 7-8 minutes. Add cauliflower and remaining ingredients to food processor and blend for desired consistency.
