Forbidden Rice & Orange Salad (Vegan)

Ingredients
Salad:-2 c cooked Forbidden (black) Rice (you can get this in the bulk bins at Whole Foods) - cook per directions.-3 small oranges, peeled, seeded, and sliced small-30 almondsDressing:-1/2 c lite coconut milk (room temperature)-1/4 c orange juice-2 t cinnamon (or to taste)
Directions
Prepare rice per directions, and allow to cool.

In a small bowl, combine cooled rice, the prepared oranges, and 30 almonds.

In a separate small bowl, combine coconut milk, OJ, and cinnamon. Using a whisk (electronic or hand), whisk vigorously until well-combined and "fluffy".

Pour dressing over rice mixture. Toss together. Refrigerate 1-2 hours or overnight for a delicious, vegan, full-flavor salad!
