slo-Cooker Tofu and Black Bean Soup

Ingredients
1/4 cup olive oil2 onions, diced1 tablespoon ground coriander1 teaspoon ground cloves1 tablespoon sherry1 container firm tofu, drained and cubed1 pound dried black beans, soaked in water overnight1 to 1.5 cups chicken stock1 bay leaf6 cloves garlic, peeled and chopped
Directions
Combine all ingredients but the tofu in a slow cooker. Cook on high for 5.5 hours. Add the tofu carefully and continue to cook for 30 minutes more.
