Krys' Slow Cooker Pork Carnitas.

Ingredients
For the Carnita Meat:-2 lbs of Pork roast, trimmed of fat.-A few teaspoons of Taco Seasoning.-One can of Mild Ro*tel Diced Tomatoes with Green Chilies.-Fresh Cilantro.-2-3 Limes.Serving options: (Not included in Calorie count)-White Corn Tortillas.-Lime Slices.-Shredded Lettuce.-Pico De Gallo.-Nonfat Refried Beans.
Directions
Trim as much fat from the pork as possible. Meanwhile, spray your crockpot with cooking spray & turn to high. Pour in the can of Mild Ro*tel, or whichever version you chose. Sprinkle taco seasoning onto pork, rub into pork, trying to cover it as much as possible. Place pork in crockpot. Place fresh Cilantro on top. Cook 6-7 hours, or until meat falls apart with fork.

Once pork is finished, preheat your oven to 450 degrees. Take a baking sheet & line it with aluminum foil. Shred pork & place on lined pan. Squeeze fresh lime juice over pork & bake for 15-20 minutes or until slightly crisp.

Serve on White Corn Tortillas with shredded lettuce, Pico De Gallo & lime slices (Optional, not included in Calorie count.)
