Penne with sausage and arugala

3 cups uncooked penne1-2 tbsp olive oil1 pound italian sausage, casing removed5 cloves garlic, thinly slicedpinch dried red pepper flakes4 plum tomatoes, choppe1 Cup red wine1/2 cup grated parmesan cheese2 cups raw arugala, chopped
-cook penne
Meanwhile prepare sausage mixture.
Brown sausage in olive oil. Break sausage into small pieces as it cooks.
Add garlic and pepper flakes. Cook till garlic is soft.
Add plum tomatoes and cook until much of the liquid is dried.
Add wine and cook to reduce liquid (about 3 minutes)
Drain pasta and add to sausage mixture. Stir. Remove pot from heat.
Add parmesan cheese. Mix in.
Add arugala. Mix in.
Ready to serve.
Serving Size: makes 6 1cup servings or 3 2cup servings
