1 lb lean ground grass-fed beef1 onion, chopped1/2 red bell pepper, chopped1 T minced garlic1/4 c sliced black olives1/4 c tomato paste2/3 cup sour creamSalt and pepper to taste3 large peeled (or not) cucumbers, sliced
Brown the ground beef with the onions and peppers. Add garlic, tomato paste, sour cream, salt and pepper, and heat through. Puree with stick blender.
With a zip lock bag full of the mixture, cut a corner off the bag and pipe the mixture onto cucumber slices (or just spread on with a spreader or knife) and top with sliced black olives.
Serving Size: Serves 6 for a meal, 20 for appetizers
