PB S'mores French Toast Bake

2 slices light whole-wheat bread3 tbsp to 1/4 c liquid egg white (or egg beaters)2 tbsp unsweetened vanilla soymilk2 packets steviacinnamon to taste1/2 tsp vanilla (or vanilla butternut)2 tbsp chocolate PB2, mixed with water to form peanut butter1 tbsp homemade vegetarian marshmallow (I've posted the recipe), cut into pieces1 graham cracker rectangle (1/4 of a single sheet)
Beat together the egg substitute, almond, stevia, vanilla and cinnamon. Dip one slice of bread in mixture. Place in ramekin or small baking dish sprayed with nonstick cooking spray. Top with prepared PB2 and marshmallow pieces.
Dip the other slice of bread in egg mixture and place it on top. Pour remaining egg mixture over everything. Crumble graham cracker on top.
Bake at 375 for 20 minutes. Wait patiently if you can. Then………
Enjoy! Top with Walden Farms chocolate sauce if you wish ;)
