Peanut Butter Protein Muffin (microwave, vegan & gluten free!)

Ingredients
2 tbsp Bob's Red Mill GF all-purpose flour2 tbsp vanilla sun warrior protein powder2 tbsp PB2 (or GF peanut flour) mixed with water to form PB2 tbsp unsweetened applesauce
Directions
Put flour and protein powder into cup. Mix with fork. Add peanut butter and applesauce and mix well (.mix well without over-mixing)...concentrate on getting the dry stuff out of the corners...
Cook for about 45 seconds. This will leave the top moist and almost iced appearing. It is vegan so no undercooked ingredients will harm you.
Is very hot...would suggest to let cool for a couple of minutes and eat straight from the ramekin.
