Crustless Turkey Bacon and Veggie Quiche

Ingredients
5 Slices Turkey Bacon1/2 Onion1/2 Red Pepper1 Cup Baby Spinach1/2 Cup Flour1 1/3 Cups of Skim Milk2 Eggs1/2 Cup of Egg Beaters1/2 Tsp Baking SodaSalt to taste2 Wedges Laughing Cow Lite Swiss Cheese, Spreadable1 Tbsp Extra Virgin Olive Oil
Directions
-Preheat to 400 Degrees
-Saute onion and red peppers together in EVOO
-Add spinach just at the end to soften
-Set aside
-Cook bacon
-Whisk eggs, egg beaters, flour, baking soda and salt
-Add in veggies and bacon
-Pour into pan (we use an 8x8 sized pan but you could use a pie pan or put into a muffin tin to make easier to freeze)
-Top with pieces of the cheese
-Cook for 25min or until set and golden edges
-Serve alone or with other breakfast favorites!
