Ingredients
1/2 cup Cashew Butter 1/2 cup Mott's Applesauce, Natural (unsweetened) 2 Tbsp. Bob's Red Mill Whole Ground Flaxseed Meal 1/3 (scant) Coconut flour1 tsp. baking soda 2 Eggs, large 1/2 cup All Whites liquid egg whites Vanilla Extract, .5 tsp (remove) Cinnamon, ground, .75 tsp (remove)1/2 cup Blueberries, fresh
Directions
Whisk ingredients together in bowl until well blended. Heat skillet over medium heat; spray with cooking spray [Can use coconut oil or clarified butter -- not included in nutrition calculations]
Drop by 2+ Tbsp. into hot skillet; sprinkle uncooked surface with fresh blueberries. Turn when brown.
We served with Blueberry Agave as exra topping.
