Ingredients
6 tbsp oat bran6 tbsp splenda (or to taste)1 tsp baking powder2 eggs6 tbsp plain non-fat yogurtspices and flavorings to taste (cinnamon, cocoa, etc)
Directions
Mix ingredients together and pour into 6 greased cups in a muffin tin. Bake 15-21 minutes at 350 degrees. Time will depend on oven strength. My Jurassic-era oven needs 21 minutes.

    I modified the recipe to get a better textured larger muffin. Grind the 6 T. oat bran into a flour in my Magic Bullet. Replace one egg with 3 T. egg white. Flavor with MIO or sugar free Jello and eliminate the additional Splenda. - 3/2/13
