Cucumber Hummis Sandwich

Ingredients
One Small Cucumber (about 8 slices)2 TBS Roasted Red Pepper HummusOne Whole Grain Pita Pocket
Directions
Slice open the whole grain pita pocket about halfway to fit the ingredients inside. Take the 2 TBS of roasted red pepper hummus and spread on each side of the inside of the pita pocket. Put in your cucumber slices (I prefer to shave off the outer skin and sprinkle salt and pepper on mine) and shove them inside. I was amazed at how tasty and filling this sandwich was, and it's only about 210 calories! (The Hummus sparkpeople has shown is 60 calories per serving, the one I use is 50, and the whole grain pita I use is 140, sparkpeople has 150).

Makes 1 sandwich.
