DELICIOUS and Moist Low Fat Corn Bread

Ingredients
1 cup Bob's Red Mill Cornmeal1 cup Organic rBST free Reduced Fat Buttermilk1 cup White Whole Wheat flour1 tsp Baking Powder1/2 tsp Baking Soda1/2 tsp Salt1/4 cup unsalted Butter, melted2/3 cup Applesauce, unsweetened2 TBS Honey1/3 cup Granulated Sugar2 Large Eggs
Directions
In a large bowl, mix together buttermilk and cornmeal. Let sit at room temp for 30 min.

In a smaller bowl mix together flour, baking powder, baking soda, and salt.

One the 30 min is up, pre-heat the oven to 375 degrees and mix the melted butter, apple sauce, honey, sugar, and then eggs into the wet ingredients.

Mix in the dry ingredients just until it is not clumpy. pour into a greased 8x8 pan and bake for 30-35 min or until golden brown and a toothpick inserted in removed cleanly.

Serving Size: Makes one 8x8 pan of 16 square servings
