Brazilian Pork Chops

Ingredients
3 bone-in pork chops, about 4 ounces each1 can red beans, rinsed3 cups brown rice2 tsp Creole seasoning (or to taste)Juice and zest from one orange1 additional orange for garnish
Directions
Salt and pepper pork chops to taste. Brown in a large skillet, then remove from skillet. Add juice from one orange to a measuring cup, then add water to make enough water to cook rice (enough to make 3 cups of rice.) Add rice, beans, water/juice mix, and zest to pan. Nestle pork chops into the rice mixture.

Bring to a boil, then cover and cook on low until rice and pork chops are cooked through, about forty minutes.

Serve with orange garnish.

Serving Size: Makes 3 servings of 1 pork chop and about 1.5 cups riceb mixture
