Gluten-free Veggie Burgers

Ingredients
*If you are gluten sensitive, be sure to use certified gluten-free oats, which are processed to avoid contamination with gluten. 1 1/2 cups of cooked lentils3/4 c. carrots, peeled and cleaned1 Red bell pepper1 medium sweet onion1/4 c. sunflower seeds1/2 cup certified gluten-free quick cook oats1 Tbs chili garlic sauce (e.g., Sirracha)1 tsp salt1 tsp pepper1 Tbs tamari (gluten free) soy sauce
Directions
1. Using food processor with grating blade, shred carrots, onion, and bell peppers. Use a towel or strainer to remove the liquid from the shredded veggies. Liquid can be discarded or used for another recipe.
2. Heat 1 Tbs of olive oil in a sautee pan. Add the onions, carrots, and bell pepper, and sautee until onions are just translucent. Remove from heat to allow to cool slightly.
3. In food processor, process gluten-free oats until finely ground.
4. To food processor, add lentils and sunflower seeds, and process to create a coarsely ground meal. Add cooked veggies, salt, pepper, sirracha, and tamari (gluten-free soy) and process until veggies are distributed throughout mixture, 30-60 seconds.
5. While mixture is still warm, form into approximately 5 patties.
6. Heat remaining olive oil in sautee pan and sautee the patties for approximately 3 minutes per side, or until brown.
7. Enjoy immediately.
