Cheddar or Colby Cheese, Low Fat, .5 cup, shreddedChicken Breast,skinles , 1 lbsSalsa, 1 cupLa Victoria Enchilada Sauce, .5 cupCaned Green Chiles (Whole), 3 ozOnions, raw, 1 slice, medium (1/8" thickTortillas, MISSION, flour tortilla, 8 inch, 8 servingChicken stock, 1 cup
Directions
place chicken, chiles, salsa, onions,3/4 of stock, half of the enchilada sauce in a slow cooker on med or a pot on med low heat and cover.cook it for 4-6 hours or untill chicken can be pulled apart. mix the rest of the stock and the enchilada sauce. put half of the saucemix in a baking dish place 1/8 of the meat mix in each tortilla and place the rest of the sauce mix and cheese on top of the tortillas bake at 400 for 10 to 15 min or until cheese is melted.
