Amanda's Eggplant Rollatini

Ingredients
1 eggplant1/4 cup Parmesan CheeseBasil, 2 tbsp(remove)1 tsp Pepper, black2 oz Mozzerlla Cheese1 cup Ricotta Cheese, part skim milk4 cup Hunt's Tomato Sauce, no salt addedSalt to taste
Directions
Preheat broiler, coat baking sheet with olive oil. Cut eggplant lengthwise, about 1/4 inch thick. Place on sheet. Broil 6" from heat forabout 10 minutes or til soft and brown. Turn once. Cut down heat to 350, combine rest of ingredients into a bowl and divide onto eggplant. Roll around filling. Arrange seam side on baking dish. Spoon 2 cups of sauce over eggplants. Sprinkle with mozzarella. Cover and bake for about 25 more minutes.
