Taco Soup - Slow Cooker

Ingredients
1.5 pounds of extra lean ground beef1 diced onion1-28 oz can of diced tomatoes1 - 28 oz can of spicy crushed tomatoes2-14 oz cans of kidney beans2-14 oz cans of lentils1-14 oz can of corn1 diced red pepper1 diced green pepper1 cup of diced celery6 cups of water2 tsp of taco seasoning1 pkg of hidden Valley Ranch Dressing mix
Directions
Fry beef in a non-stick pan. Drain and rinse with hot water. Add onion and fry for 5 minutes. Add remaining ingredients, rinsing cans with water and adding it to soup mix (total of 6 cups).
Simmer in crockpot on low for 8 hours.
Makes approximately 25 - 1 cup servings.

ground turkey or chicken may be substituted
additional vegetables may be added.

    This makes A LOT of soup! I ended up just adding the taco seasoning and ranch dressing mix to the beef while it was browning and then just mixed everything else together in the crockpot. And I didn't add all the extra water because we like thicker soups/stews. Great flavor, even the kid liked it :) - 1/17/11
