Turkey Meatloaf

Ingredients
1 T olive oil3/4 cup onion, finely chopped1/4 cup green pepper, chopped2 med garlic cloves, minced1/4 cup low fat shredded cheddar cheese, sharp1/4 cup seasoned bread crumbs1.5 tsp Italian seasoning1 tsp ketchup1/2 tsp salt1/2 tsp black pepper1 large egg1 1/4 lb ground turkey1 spray cooking spray1/2 cup ketchup1 T unpacked light brown sugar1 tsp brown mustard
Directions
Heat oil in large nonstick skillet over medium high heat. Add onion, bell pepper and garlic. Saute 3 minutes. Cool.

Combine onion mixture, cheese, bread crumbs, Italian seasoning, tsp of ketchup, salt, pepper and egg in a large bowl. Toss to moisten bread. Crumble turkey over onion mixture. Stir just until blended.

Pack meat mixture into an 8x4 inch loaf pan coated with cooking spray. Bake at 350 for 35 minutes. Combine ketchup, brown sugar and mustard in a small bowl.

Spread ketchup mixture over meat loaf adn bank an additional 10 minutes.
