Marienated Fresh Vegetable Salad

Ingredients
2 cups sliced celery2 cups thinly sliced carrots2 cups cherry tomatoes halved2 cups sliced cucumber1 medium onion thinly slice & seperated into ringsDressing: 3/4 cups olive oil1/2 cup minced parsley3 Tbsp white wine or balsamic vinegar1 minced garlic clove1 tsp salt1 tsp groud mustard1/8 teaspoon black pepperCombine vegetables together. Whisk ingredients fo dressing & pour over vegetables. Toss to coat, cover and refrigerate for 2 hours.
