Simple Winter Soup

Ingredients
½ tbsp olive oil3 leeks, chopped1 onion, chopped2 carrots, chopped2 ribs celery, chopped2 cloves garlic, minced2 cups vegetable broth1/2 lb green beans, roughly chopped3 cups plum tomatoes, chopped1 lb green cabbage, shredded3 cups cooked cannellini beans1 cup waterSalt and pepper
Directions
In hot oil, cook leeks, onion, carrot, celery, and garlic.
Add broth. Simmer 10-15 mins.
Add green beans, tomatoes, and cabbage, stirring.
Add beans, water, salt and pepper.
Cover, simmer 40 minutes, and serve.

    Fantastic soup! Added a little tobasco for kick. I needed to add about 2-3 more cups of water during simmering, each dissolved with a bouillon cube. Add some crusty french bread and you have a delicious, filling and nutritious meal! - 1/30/11
