Stuffed Peri-Peri Chicken Breasts

Ingredients
4 Chicken Breast4 Tbs. Lowfat Cream Cheese12 Jalapeno pepper rings (canned), dicedFreshly ground salt and pepperFor the Peri-Peri Marinade (I highly recommend preparing this the day before, so you can let the chicken marinate overnight...it makes for the most tender, juicy chicken! If you're in a rush, let chicken soak in marinade for at least 30 minutes):Juice of half a lemonJuice of half a lime2 cloves garlic, finely chopped2 teaspoons crushed chillies (OR 2 tsp. Dried Red Chili Pepper Flakes)1 teaspoon paprika1 teaspoon oregano¼ cup apple cider vinegar1 tsp. Smoke flavor (optional)Sea salt and black pepperMix the above marinade ingredients in a bowl.Place the chicken breasts in the marinade and ensure that each piece is fully coated. Cover the bowl with cling flim and place in the refridgerator overnight (or 30 minutes at least).
Directions
Preheat oven to 200 celcius.

Heat a non-stick frypan on medium-high heat until hot and sear your chicken breasts for 1-2 minutes on each side (until nicely browned on both sides).

Mix cream cheese, jalapeno's, salt and pepper in a small bowl.

Carefully slice each chicken breast along the middle creating a "pocket" (be careful not to cut all the way through) and fill each pocket with cream cheese mixture (about 1.5 Tbs in each).

Wrap chicken breast (individually) in foil and place in the oven for 20-25 mins or until cooked through.

Serve immediately!
