Ingredients
Egg, fresh, 3 MediumOnions, raw, 1 cup, choppedPeppers, sweet, red, fresh, 1 cup, choppedegg white, fresh, 1 MediumArriba! Fire Roasted Mexican Red Salsa (Mild), 8 tbspCouscous, 4 cup, cookedKraft Shredded 2% Mexican Four Cheese blend, .5 cupChicken Breast, no skin, 16 ounces2 tbsp Olive Oil Kroger Frozen Green Peas (2/3 cup), 2 servingSalt and Pepper to Taste
Directions
Cook the couscous as directed. Bake the chicken as directed. Put in 1 tbsp of olive oil in a skillet put the onions and red peppers and chicken. after the onions and peppers cook down put in the last bit of olive oil 3 eggs and scramble. Once the eggs are done Put all the stuff into a big bowl and stir in the cheese and add the couscous. stir till cheese is melted.
