Cranberry-Apple Quinoa Salad

Ingredients
1 c. quinoa, rinsed2 c. reduced-sodium chicken broth1 granny smith apple, diced1/3 c. dried cranberries (craisins)3 scallions, chopped3 tbsp. citrus herb dressing2 tbsp. toasted walnuts
Directions
1. Combine quinoa and broth in medium saucepan; bring to boil. Reduce the heat and simmer, covered, until the quinoa is tender, about 10 min. Drain.
2. Remove from heat and let cool (about 10 min)
3, Add the apple, cranberries, scallions, and dressing to the quinoa; toss to coat. Sprinkle with walnuts and serve.
