Ingredients
Extra Virgin olive oilOnions, raw, 2 cup, chopped Green Peppers (bell peppers), 1 cup, stripsPeas, frozen, 1 cup Zucchini, 1 cup, sliced Broccoli, frozen, 1 package (10 oz) *Brown Rice, long grain, 1 cup Beans, pinto, 2 cup Canned Tomatoes, 1 cup
Directions
Saute the onion and bell pepper in the olive oil in a large suacepan. Season with thyme, oregano, salt, pepper and cayenne. Let simmer. Add peas, zucchini, broccoli. Stir in rice then pour into a baking dish. Bake at 350 for half an hour. Enjoy!
