Crock Pot Cabbage Rolls

1 head cabbage1 lb lean ground turkey (93% lean)1/2 cup uncooked brown rice1 large egg1 package dry onion soup mix1 can tomato sauce1/4 cup parmesan cheese4-6 cups V8 juice (I use spicy hot but it tastes mild)
Carefully remove 7-9 cabbage leaves from the head of cabbage, trying to keep them whole. I have found that it is easiest to cut the leaf at the stem and try to remove it from the head from the stiffer part of the leaf. Stack the whole cabbage leaves on a plate and microwave for 1.5-2 minutes or until they are slightly limp. You want them to be soft enough to fill & roll. Set aside. In a large bowl, combine ground turkey, tomato sauce, onion soup mix, egg, rice, & parmesan cheese. Mix well, then evenly spoon mixture into the center of the cabbage leaves. fold the cabbage leaves around the mixture, keeping the ground turkey mixture in a little pocket. Place all cabbage rolls in crock pot, seam side down. Pour V8 juice over rolls until they are all covered, but not swimming. Place lid on crock pot & cook all day on your preferred settings. I usually cook on low for the first few hours, then turn to high for the last few to ensure the rice cooks. Enjoy!
