light, sugar free blueberry muffins

Ingredients
2 cups flour1 tbsp baking powder1.5 tsp salt2 tbsp shortening1/3c splenda1 egg1 tsp vanilla1 cup milk1.5 c fresh blueberries
Directions

mix dry ingredients. Mix egg, shortening, vanilla, and milk in another bowl. add dry ingredients and mix just until moistened (add up to 1/3 c milk if too dry) Over mixing will cause dense muffins. Fold blueberries gently into mix. drop by teaspoonful into greased mini muffin tin. Bake at 375 degrees for 8-10 min.
