Spinach & Barley Soup

Ingredients
1/3 C Uncooked Pearled Barley4 C of Chicken Stock3 Garlic Cloves, Minced2 T Dried Parsley2 C of Fresh Spinach, torn into smaller pieces8 t of grated parmesan2 T Lemon juice
Directions
Combine chicken stock, parsley, garlic and spinach and cook over medium heat until spinach and garlic are tender. Cook barley as directed. Divide barley between two bowls and then pour half of the broth over each one. Top each bowl with 1T of lemon juice and 4 t of grated parmesan cheese. Salt to taste.
