Chicken da Lime

Ingredients
2 chicken breasts (or more if you like more meat - 2 makes it very light on the meat)6 plum tomatoesabout a cup of chopped fresh cilantrojuice from 4 limeslarge onion (I use vidalia sweet onion)4 jalapenos8 cups chicken broth4 cloves garlic5 stalks celeryOlive oilThyme (dried)Pepper
Directions
Saute all onion, celery, & garlic in olive oil, add tomatoes (cubed) near the end and then add broth. Brown chicken on both sides (sprinkle with thyme and black pepper) and add to vegetables and broth mixture. Cook for 20 minutes (approx). Take chicken out and shred. Cook a little longer, maybe 10 minutes. Add chicken back in along with juice from limes and cilantro. Cook 5 minutes. Serve.
