Ingredients
2 T. Olive Oil4 minced garlic cloves1.5 cups chopped bell pepper1/2 cup chopped scallions1 T. ThymeAbout 15 small green olives (w/pimento), chopped1 Cup chopped tomato1 T. Balsamic Vinaigrette1 t. Cayenne1 t. Black Pepper1/2 t. salt1 pound White Fish Filet (Hake, Haddock, Cod)
Directions
Sautee garlic, bell pepper, scallions, and thyme in olive oil over high heat for about 6 minutes.

Add olives, tomatoes, balsamic vinaigrette, cayenne, black papper & salt, mix thouroughly, and cook 3-4 for minutes. Set veggie mixture aside.

Using the same sauce pan (without washing it!), sautée the fish about 4 minutes on each side.

When done, spread veggie mix over fish and serve.

    Oh wow! Those calories! LOL, I definitely want to make this, though. That's healthy fat calories. :) I would just leave out the olives, only because I don't like them. The rest would be fabulous! - 8/25/17
