Karen B's Low Fat Apple Muffins

Ingredients
1 1/4 C. whole wheat flour1/2 C. white sugar1/3 C. quick oats1/8 tsp salt1 1/2 tsp. baking powder1/2 tsp. baking soda1 1/2 tsp. ground cinnamon2 Tbsp. ground flax seed1/4 tsp. nutmeg2 egg whites1/2 C. applesauce, unsweetened1 tsp. vanilla1 5.3 oz. container fat free greek vanilla yogurt1/4 C. chopped walnuts1 1/2 medium granny smith apples, peeled and finely chopped
Directions
Preheat oven to 350. Line muffin tin with cupcake liners and spray with non-stick cooking spray. Sift together dry ingredients and then stir in ground flax and quick oats. In a small bowl, mix together egg whites, applesauce, yogurt and vanilla, Add to dry ingredients, along with apples and walnuts, stirring just until blended. Pour mixture into lined muffin tins and bake for 25 minutes.
