*Health Choice Smoked Sausage, 1 piece, sliced2C Roasted Chicken, light meat, chopped 2 tbsp veg. oilOnions, raw, 1 cup, chopped Green Peppers 1 cup, choppedSalt, 1 tspGarlic, 1 clove chopped1 can diced tomatoes1 1/2 c chicken broth*1/2 c White Rice, long grain, mushrooms, canned,drained1 tsp creole seasoning1 bay leafparsleypepper*use homemade broth to cut sodium
heat oil over med heat in dutch oven.add sausage, peppers, onions, celery garlic,salt.and creole seasoning and pepper.brown veggies and sausage. add chicken,parsley and bay leaves. stir in.add chicken broth, tomatoes and rice. bring to a boil, simmer 20 min. till rice is done. remove bay leaf. serves six. good with garlic bread
