Chicken Vegetable Quinoa Soup

Ingredients
2 C chopped carrots (about 2 carrots)1.5 C chopped celery (about 2 stalks)1 medium onion, chopped1 C mushroom pieces.5 C chopped bell pepper13 oz chicken breast, chopped into small chunks.5 C quinoa2 C low sodium vegetable broth1 T olive oilpepper to taste
Directions
Cube chicken and brown in .5 T olive oil, remove from pan. Saute carrots, celery, onion, mushrooms, and bell pepper in remaining .5 T olive oil until soft (approx. 5 minutes). Add quinoa, broth, and chicken to pan and simmer for 1 hour.

Serving Size: Makes 5 servings (approx. 2 cups/serving)
