Grilled Chicken w/ Lemon & Oregano

1 Tablespoon grated lemon zest1/3 cup lemon juice1 Tablespoon olive oil1/4 cup finely chopped fresh oreganocoarse salt & freshly ground pepper, to taste1 1/2 lb boneless skinless chicken breasts4 medium lemons, halved crosswiseoregano sprigs for garnish, optional
1. Prepare marinade: In a small bowl, whisk lemon zest and juice, oregano, oil, salt and pepper. Place marinade in a large re-sealable plastic bag and add the chicken; shake to coat. Let marinate at room temperature for 30 minutes, turning bags occasionally.
2. Grill the chicken: Preheat grill to medium. Remove chicken from marinade, and place on hot grill. Cover and cook until lightly browned and cooked through, about 8-10 minutes.
3. Turn chicken over, cover and cook until chicken is cooked through.
4. Transfer chicken to cutting board. Allow to rest 10 minutes. Meanwhile, place lemon halves on the grill, cut side down; cook until slightly charred, 8 to 10 minutes.
5. Serve chicken breasts with grilled lemon halves. Garnish with fresh oregano sprigs, if desired.
