Curried Cous Cous

Ingredients
1 1/2 cups couscous1 1/2 cups boiling water1/4 cup plain greek yogurt1/4 cup good olive oil1 teaspoon white wine vinegar1 teaspoon curry powder1/4 teaspoon ground mustard1 1/2 teaspoons kosher salt1 teaspoon freshly ground black pepper
Directions
Add 1.5 cups of boiling water to 1.5 cups of dry cous cous. Cover and let sit for 5 minutes. Fluff with fork.

Mix yogurt, olive oil, curry powder, mustard, pepper, vinegar, salt and parsley. Add to cous cous and mix well.
