butterscotch oatmeal bars (made with beans!)

Ingredients
1/4 c margarine1 c sugar (brown recommended)1 egg1/2 can cannellini beans (white kidney beans)1/2 c peanut butter2 tsp vanilla1/2 c whole wheat flour1/2 c white flour1 tsp baking powder1/2 tsp baking soda1 c oatmeal1/2 c butterscotch chips
Directions
Preheat oven to 350 degrees. In a food processor, thoroughly mash the beans. Add the margarine, sugar, egg, vanilla and peanut butter; beat well. Stir in flours, baking powder, baking soda, oatmeal and chips. Spread in a sprayed 9x13 pan. Bake for 20 minutes. Cut into 24 bars.

Serving Size: Makes 24 bars.
