Cous Cous Salad

Ingredients
cous cous, 225g (8oz)1 bunch parsley, chopped1 bunch cilantro, chopped1 red onion, choppedzent and juice of 1 lemon1/2 cucumber, peeled, seeded, and chopped1oz sunflower seeds1oz sesame seedsExtra Virgin Olive Oil, 4 tbsp
Directions
1.Cover the couscous with twice its volume of hot water and leave to soak for 10 minutes.

2.Mix together with the remaining ingredients and leave to stand for 30 minutes to let the flavours develop.

3.Serve at room temperature.
