Stove Top Chicken Bake Serves 6

Ingredients
Chicken Breast, no skin, 16 ounces (remove)Stove Top Stuffing Mix, 6 serving (makes 1/2 cup prepared) (remove)Sour Cream, reduced fat, .5 tbsp. (remove)Cream of Chicken Soup, 1 can (10.75 oz) (remove)Mixed Vegetables, canned, 1 cup (remove)drained1 2/3 cup hot water
Directions
preheat oven to 400 degrees.
add hot water to stuffing mix;
stir just until moistened, set aside;
place chicken pieces in bottom of 13x9 baking dish or 2 qt. casserole dish.pour 1 cup of drained mixed vegetables on top of chicken;mix soup and sour cream till well blended; pour over chicken and vegetables top w/stuffing; bake 30 minutes covered till chicken is cooked through.

    I used two frozen chicken breasts, cut up and a can of low fat reduced sodium cream of celery soup in place of the sour cream. I also used a whole bag of frozen veggies.... we love it as a quick dinner... - 12/27/09
